Big. Bold. Flavors. This is a meal that is surprisingly light for its huge presence on the palate. Za’atar is a middle eastern herb blend with oregano, thyme, sesame seed, and sumac. It pairs exceptionally with poultry and lamb, and in this case, really made a bold statement on the sous vide chicken, which was fork tender.
The Israeli couscous, larger than its more popular cousin, was loaded with an almost absurd amount of flavor that worked quite well with the chicken – and the fresh cherry tomatoes and parsley cut it all perfectly with a burst of freshness. We had it with a glass of Marachal Foch from a recent trip to a NH vineyard that made this a truly beautiful meal. FULL POST
