What a blast from the past – this was the first Korean dish I ever had, many years ago, and it is always a super easy, delicious meal. I’m not at a level of proficiency with Korean cuisine where I can improvise on the fly, so I used the recipe from Maangchi, my favorite online resource for Korean food.
I added some glass noodles (I forgot to get ramen when I was at the store), green onion, and soy-garlic marinaded egg to the mix to kick it up a bit, and it was super tasty. I will probably try to get fresher dduk next time, and maybe cook it a little longer because it remained a bit chewy, but all the flavors were on point. The anchovy stock makes a subtle but important difference that gave it a really nice, authentic taste. Not a bad way to kick off my Korean themed weekend.
