Arugula Pesto “Deconstructed”

What on earth is better than sitting down with a fork (or spoon) and a mountain of delicious pesto pasta?  And what else so simple can bring such joy? Not much.  This is a recipe that was inspired by a Nigella Lawson version I read about a while back.  I recreated it from memory here and changed a couple things.  I also used a technique that finally solved my #1 pesto issue of all time by using a slight deconstruction methodology. Equipment Review: Global 10″ Chef Knife

The chef knife is the most indispensable tool in the kitchen.  I can begrudgingly make a meal without a torch, but I need a knife, plain and simple.  That being said, the choice of this “one tool to rule them all” is quite personal and there is no one-size-fits-all.  This is what works for me, and I’ll tell you why – but I would encourage anyone looking into a serious chef knife to go out and feel it in your hand before buying.
